10-十一碳烯酸;10-hendecenoic acid;undecylenic acid

性质：常温下为具有光泽的无色液体，有水果香味。熔点24.5℃。沸点275℃（100kPa）。闪点148℃。折射率1.448～1.450。相对密度0.910～0.913。微溶于水，溶于乙醇、乙醚等。具有双键和羧基的通性。由蓖麻油和甲醇酯交换后进行高温裂解得十一碳烯酸甲酯，再经皂化、酸化得十一碳烯酸。主要用于合成香料，如γ-十一内酯、麝香酮、大环十五内酯、壬醛等。
