The invention provides a production method for diglyceride edible oil, which comprises the following steps: (1) charging strong-base and weak-acid salt cushioning liquid and triglyceride edible oil into autoclave by the weight ratio of 0.3-1:1, then charging immobilized lipase 0.5-10% of the total amount of the cushioning liquid and triglyceride edible oil, so as to establish the reaction system, (2) subjecting the reaction system to ester hydrolytic reaction for 2-10 hours while intimately mixing, (3) isolating immobilized lipase from the hydrolytic reaction liquid to obtain de-enzyme reaction liquid, (4) isolating diglyceride edible oil and triglyceride edible oil from de-enzyme reaction liquid.
