The date juice producing process includes the following steps: sorting and washing fresh date; drying and cooling; boiling for 20-25 min; pulping, peeling and stoning; adding water in 2-10 times; filtering to obtain filtrate; homogenizing and transient sterilization; vacuum deairing and bottling; and sterilizing in high pressure pot at 100-110 deg.c. The initially high temperature treated date may be maintained in cold warehouse for over 12 months to ensure the continuous production of date juice all the year around. Thus produced date juice needs no any auxiliary components, and may be stored for long term. |
